The corrugated roller and normal roller are the main assembly units in the noodle production line rolling processing step. The core difference lies in the different textures they endow to the noodles, which directly affects the final shape and quality of the noodles.
The corrugated roller has regular wavy grooves on its surface, which can press the calendered sheet into a continuous wavy shape on the noodle production line rolling processing. This design ensures that the noodles are heated more evenly during subsequent steaming, frying, and dehydrating faster. It can also effectively prevent the noodles from sticking together, ultimately forming the familiar curved shape, enhancing the texture and rehydration speed.
The normal roller has a smooth surface or only fine straight lines. They are mainly used for the initial calendering and shaping of sheets to ensure uniform thickness and smooth surface of the sheets, providing a foundation for subsequent corrugated forming. It is not responsible for shaping the final curved form of the noodles.
In short, the corrugated roller is the "stylist," determining the curvature and texture of the noodles. The normal roller is the "grinding worker," ensuring the basic quality of the dough sheet. Only when the two rollers work together can stable-quality instant noodles be produced.
