Making Process
1.Mixing: Use a flour mixer to mix flour and alkali water. The stirring time is about 15minutes. The dough produced in this process is composed of a fine mesh structure.
2.Compound rolling: The dough is passed between the two rotating rollers to first make two dough sheets, and then combine them into one. In this process, the dough sheet is made strong and even.
3.Continuous rolling: The sheet passes between several rotating rollers and is pressed thin to about 1 mm. In this process, the mesh structure of the surface is strengthened.
4.Slitting: After pressing, the dough sheet enters slitting stage. Slitting and wave making can reflect the quality of dough.
5.Steaming: The noodles are steamed through a steamer. Steaming time is generally 120 seconds to 250 seconds, which can be adjusted according to the production process.
6.Forming: Through the cutting machine, the noodles are cut and shaped here.
7.Drying: The formed noodle cake can be quickly dehydrated and dried under high temperature and high pressure and this is the finished noodle cake.
