Aging Machine is a part of Fresh Noodle Production Line, which is placed between Compound Rolling Machine and Continuous Rolling Machine. Aging Machine is set up to permeate water into the interior of protein colloid particles and absorb water expansion, forming a network gluten. In fact, this is continue the process of flour mixing. Besides, it can eliminate the inner stress of dough that make the structure of dough stabilization. By aging, the gluten can be stretched to make the dough more elastic. The finished noodles will also have a more chewy texture.
Aging Time
Aging time is the major factor to influence the aging result. Theoretically the aging needs long time and the temperature is controlled at about 25 degrees. The aging time of hand-extended noodle need 6 hours but the machine need continuous to product that the aging time is generally no more than half an hour, but not be less than 10 minutes. The aging time is too short that the flour network couldn’t finished, made of noodle cake without resistance to soak. Coordinating the production of machine and quality of dough, the best aging time is 20mins to 30mins.
